Daniel grew up in Nova Scotia, Canada and studied mathematics & philosophy before heading west to Vancouver to pursue his culinary career.  Upon receiving his apprenticeship, he headed to England and landed a job in pastry at the fat duck restaurant under Heston Blumenthal.  After three years, he went to Copenhagen and became the first pastry chef and eventually also the sous chef of restaurant Noma in 2006, where he embraced terroir, seasonality and the pursuit of excellence.

In 2013 Daniel gave life to Tørst & Luksus, an elegant craft beer bar and tasting menu restaurant in Brooklyn.  Luksus earned its Michelin star in 2015 and to this day, is the sole restaurant to receive a star pairing only beer.  Phaidon published his first book to share the story and beauty of Tørst & Luksus.

‘Burns Gelato’ is chef Burns's next project and is the culmination of many years of experience & experimentation with gelato and the exploration of flavor. Their first shop will open this year in NYC.


PG Clucks is a fried chicken shack downtown Toronto, specializing in sandwiches and Nashville style hot chicken. All our chicken is deboned leg meat. We brine it for 24 hrs. in a lemon and herb brine, and 6 hours in buttermilk. We dredge it twice for that extra crispness.
